Every Wednesday is a journey. Each month, a different city or country to discover through cocktails and food. The bar and iconic globe at BiBo would visually transform to reflect the destination of the month through lighting, subtle styling details, and atmosphere, without the need for large-scale productions.

To bring this to life, we would create signature cocktails from each region alongside a curated selection of dishes inspired by the destination. Ideally, the experience would take place around the bar area and nearby tables, allowing guests to sit comfortably, so the offering should remain simple and easy to serve. The aim is to reinforce BiBo’s playful, travel-inspired spirit, with a new country featured each month to keep the concept fresh and ever-changing.

Every Wednesday throughout May and June: Mexico. Mexican-inspired cocktails and a selection of dishes inspired by the country:

• The original Tijuana Caesar salad with chicken
• Tableside guacamole with castacán
• Málaga white prawn aguachile with carrot and green mango
• Zarandeado sea bass with fresh Mexican-style salad
